According to the SDK manual we can modify existing maps, if I make a new map folder in my mod folder and I change the greyscale file of the existing maps I have no result. Is it possible to have different terrain in the existing maps or at the moment it's impossible?

You need to be playing sandbox or a modded scenario to see the results. But I think what you are doing should be possible.

in the current scheme of things, no, you cannot modify the existing terrain.
