Guy's this is going to be a great game!, just one question.
Will the Gettysburg "open play" map have entrenchments in it?

You can play any of the maps in sandbox, so any entrenchments in the main game would be there for sandbox. They are part of the map.

Are there entrenchments on Seminary Ridge?
Are the ones on Culp's hill not their in a July 1st Scenario, to say?
