I love that movie. I know the hand-to-hand fighting was ahistorical but the LOOK of that movie was so great.
Also, it was pretty stirring. It made me want to run through the forest a lot (without somehow tripping every few feet).

One thing for the French and Indian war:
Some kind of ambush mode so you can take advantage of your irregulars (Indians and rangers).
On the European side of the conflict:
Great flexibility in use of scout cavalry.
